Chocolate and Orange Zest Tart
Serves 8
Ingredients:
For the pastry
250g plain flour
125g cold unsalted butter
1 egg
1/2 teaspoon salt
For the custard
100g caster sugar
5 egg yolks
1 pint double cream
1 Tablespoon vanilla essence
200g dark chocolate
2 oranges, zest only
2 Tablespoons Grand Marnier

Method:
• Firstly make the pastry, allow it to rest and blind bake.
• Meanwhile, make the filling by melting the chocolate very gently with the sugar in a saucepan. Separate the eggs so that the yolks are ready to use. Remove the chocolate from the heat once it has melted and allow the mixture to cool slightly. Grate the orange zest in tot he melted chocolate.
• In a separate and clean saucepan heat the double cream and vanilla essence. Gently add the yolks to the chocolate and whisk through. When the double cream comes up to a boil, pour it directly into the chocolate mixture whisking vigorously. Now, pour into the cooked tart case and put back into the oven at 175º C and cook for a further 30-40 minutes, or, until the mixture has set.
• Remove the tart front eh oven and place on a wire rack to cool.
