The search for the best oatmeal cookie recipe is a never-ending quest for baker’s heaven. We love this recipe by LOAR contributor Diane Bittiker that adds a bit of coconut to the mix. If you have a sweet tooth, you will love this dessert and delicious Oatmeal Cookies recipe. If you have a nut allergy, or are serving them to someone who does, be sure to omit the peanuts!
Grandma Peterson’s Oatmeal Cookies recipe by Diane Bittiker
1 cup butter
1 cup brown sugar
1 cup white sugar
2 tsp baking soda
1 tsp baking powder
2 tsp vanilla
1 tsp salt
1 cup coconut
2 cups oatmeal
2 cups Wheaties cereal
2 cups flour
2 cups salted peanuts
2 cups chocolate chips (optional)
Add and mix ingredients into a mixing bowl in the above order. Roll into 2-inch balls, press down on parchment lined cookie sheets and sprinkle the each cookie very lightly with sea salt.
Bake until light brown at 350 degrees. Do NOT over bake!
Cool on the cookie sheets for 2-3 minutes.
