Simple easy recipes are our favorite on Life of a Rockstar. This Persimmon and Avocado Salad recipe by LOAR contributor Diane Bittiker is a perfect summer salad that looks more like a treat than a nutritious meal. Colorful and bright, this salad is a great lunch or meal to go.
 
Persimmon and Avocado Salad recipe by Diane Bittiker
 
Fuyu persimmons – peeled and cut into bite sized pieces
Avocados – cut into bite sized pieces
Slivered almonds
Chopped green onions
GIRARD’S Champagne dressing
 
Mix equal parts of persimmon and avocado. Add almonds and onions to your taste. Sprinkle lightly with the dressing. This can be served alone or on a bed of mixed greens.
